Whole Salmon With Tarragon Dressing

|Head of lettuce||1⁄2 Small|
|Mayonnaise/Half sour cream||2 Cup (32 tbs)|
|Crushed tarragon||1 Tablespoon|
|Lemon juice||2 Tablespoon|
|Minced onion||1 Tablespoon|
|Lemon slices||3 (For Garnishing)|
|Cherry tomatoes||2 (For Garnishing)|
|Parsley||2 (For Garnishing)|
Have fish cleaned but don't remove head and tail.
Sprinkle 1 teaspoon salt and dash pepper inside fish; dot with butter.
Cut fish in half crosswise.
Cover an 11 by 15-inch shallow baking pan with lettuce leaves and place both halves of the fish on the lettuce.
Bake uncovered in a 400° oven for 1 hour or until fish flakes easily.
Cool, then chill several hours or overnight.
