Whole Salmon With Tarragon Dressing

  Salmon 8 Pound (1 Piece)
  Butter/Margarine 3 Tablespoon
  Head of lettuce 1⁄2 Small
  Mayonnaise/Half sour cream 2 Cup (32 tbs)
  Crushed tarragon 1 Tablespoon
  Lemon juice 2 Tablespoon
  Minced onion 1 Tablespoon
  Salt 3⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
  Lemon slices 3 (For Garnishing)
  Cherry tomatoes 2 (For Garnishing)
  Parsley 2 (For Garnishing)

Have fish cleaned but don't remove head and tail.
Sprinkle 1 teaspoon salt and dash pepper inside fish; dot with butter.
Cut fish in half crosswise.
Cover an 11 by 15-inch shallow baking pan with lettuce leaves and place both halves of the fish on the lettuce.
Bake uncovered in a 400° oven for 1 hour or until fish flakes easily.
Cool, then chill several hours or overnight.
