Toasted Sesame Salmon
|Sesame seeds||3 Tablespoon, lightly toasted|
|Coarsely ground black pepper||1⁄4 Teaspoon|
|Center cut salmon fillet with skin||4|
In small bowl, lightly beat egg white with 1 tablespoon water.
On waxed paper, mix sesame seeds, salt, and pepper.
Dip flesh side of each piece of salmon fillet in egg white mixture, then dip same side in sesame seed mixture to coat.
Heat nonstick 10 inch skillet over medium high heat until hot.
Add salmon fillets, sesame seed side down, and cook 3 minutes.
With pancake turner, turn salmon over and cook 5 to 7 minutes longer, until fish flakes easily when tested with a fork.
