Salmon with Grilled Eggplant

Best Salmon dish I made yet. The rub I used is a must try.

Ingredients

Eggplant 1 , peeled and sliced into 1 inch thick slices
Olive oil 4 Tablespoon
Rub 6 Tablespoon (Dizzy Pig River Rub)
Salmon 2 Pound
Butter 1/4 Cup (4 tbs)
Maple syrup 1/4 Cup (4 tbs)

Directions

GETTING READY

1. Drizzle olive oil over the eggplant slices. Spread dizzy pig rub all over the eggplants.

2. Rub salmon the same way with olive oil and rub.

3. Prepare the grill with the grill grates for cooking.

4. Mix together butter and pure maple syrup together to make a glaze. Set it aside.

MAKING

4. Coat the new grill grates with canola oil and then place the eggplants over the grates.

5. Also, keep the salmon on the grill and cook everything.

6. Rotate the eggplant slices and grill further to get perfect grill marks on the eggplant.

7. Brush the eggplants and salmon with the glaze. Cook until done.

SERVING

8. Arrange the salmon and the eggplants on a platter and serve.
