Sweet Spiced Peach Jelly
|Canned diced peaches||1 Cup (16 tbs), drained, liquid reserved|
|Peach liquid||3⁄4 Cup (12 tbs)|
|Vinegar||1⁄4 Cup (4 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Peach gelatin envelope||1⁄4 Ounce|
|Boiling water||1 Cup (16 tbs)|
Combine peach liquid, vinegar, sugar, cloves, and cinnamon; bring to a boil and simmer for 10 minutes.
Remove from heat; strain.
If necessary, add water to make 1 cup.
Dissolve gelatin in boiling water.
Stir in spiced peach syrup.
Chill until slightly thickened.
Fold in diced peaches.
Pour into a 3 cup mold and chill until firm.
