Avocado And Ham Salad
|Lemon juice||1 Cup (16 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Ripe avocados||4 , halved and peeled|
|Lettuce heads||2 , leaves separated, washed and patted dry (Use Red Leaf Or Boston Variety)|
|Baked ham||3 Pound, cut into 1/4 inch slices and then into 2 inch strips (Make Them A Bit Rough Looking)|
|Tomatoes||8 Medium, cut into quarters|
|Purple onion||1 , peeled and cut into thin rings|
|Lemon vinaigrette||1 Cup (16 tbs) (Recipe Follows)|
|Freshly ground black pepper||To Taste|
|Chopped parsley||1⁄4 Cup (4 tbs)|
|Watercress||1 Bunch (100 gm), washed and dried (Used For Garnishing)|
Mix lemon juice and water together in a small bowl.
Slice peeled avocado and dip into lemon juice mixture.
Line a large serving platter with lettuce leaves.
Arrange avocados, ham, tomatoes and onion rings in a decorative spiral fashion on lettuce leaves.
Drizzle salad with lemon vinaigrette.
Season with salt and pepper and sprinkle with chopped parsley.
Garnish with watercress
