Egg Salad Sensations
|Butter||1⁄4 Cup (4 tbs)|
|Prepared mustard||1 1⁄2 Teaspoon|
|Hard cooked eggs||4|
|Finely chopped cooked ham||1⁄4 Cup (4 tbs)|
|Dairy sour cream||1⁄4 Cup (4 tbs)|
|Dry mustard||3⁄4 Teaspoon|
|Black pepper||1⁄4 Teaspoon|
|Ripe avocado slice||2|
|Lemon juice||1 Tablespoon|
|Seasoned salt||To Taste|
|White bread slice||2|
|Thin tomato slices||2 Large|
Whip butter until softened; blend in the prepared mustard.
Combine the eggs, ham, and sour cream; thoroughly blend in a mixture of the dry mustard, salt, and pepper.
Set aside in refrigerator.
Just before serving, prepare avocado slices and dip immediately in lemon juice; sprinkle with seasoned salt.
To assemble sandwiches, spread mustard-butter over bread slices; put tomato slices on mustard-butter; spoon egg mixture over slices.
Cut each sandwich into fourths and arrange an avocado slice on each fourth.
