Simple Cucumber Salad

This cucumber salad is a nice alibi to any meal. The cucumber salad is a perfect summer recipe. The cucumber with cottage cheese gives the cucumber salad a refreshing taste.
  Grated cucumber 2 Cup (32 tbs)
  Unflavored gelatin 2 Tablespoon
  Salt 2 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Minced onion/Chives 2 Tablespoon
  Cream style cottage cheese 3 Cup (48 tbs)
  Paprika 1⁄4 Teaspoon

Drain cucumber thoroughly; measure juice.
Add enough water to make 1 cup liquid.
Soften gelatin in liquid; dissolve over boiling water.
Add seasonings and onion.
Stir in cucumber and cheese.
Pour into individual molds or 1 large mold; chill until firm.
