|Cantaloupe balls||1 Cup (16 tbs)|
1.Start by cutting cut small balls from a cantaloup that is fairly firm in texture, use a vegetable cutter to do that
2.Arrange several balls on a slice of tomato which has been placed on a nest of lettuce leaves.
3.Garnish with pieces of red pepper or green pepper cut in diamond shapes.
4.Serve with pineapple vinaigrette
