Winter Fruit Salad
|Pitted prunes||12 (Stoned)|
|Dried apricots||7 Ounce|
|Golden raisins||1 Ounce (Sultanas)|
|Superfine sugar||1⁄4 Pound|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Slivered almonds||1 Ounce|
Rinse the dried fruits under plenty of cold running water.
Pat dry on kitchen paper.
Put in a casserole.
Add 2 1/2 cups (500 ml/18 fl oz) of water, 3 oz(75g/3oz)of sugar and 3 (2) tablespoons of lemon juice.
Cover and microwave on HIGH for 14 minutes.
Peel and core the apples, and cut in thick slices.
Put in a dish with the remaining sugar and lemon juice and the cinnamon.
Cover and microwave on HIGH for 3 minutes.
Drain the dried fruit, reserving the cooking liquid, and put in a salad bowl.
Add the apples.
Pour the cooking liquid from the dried fruit and the apples into a bowl and reduce by half in the microwave, oven for about 5 minutes on HIGH.
Pour over the fruit and leave to cool.
