Gala Beet Salad

Ingredients
  Canned beets 1 Cup (16 tbs), drained and diced
  Lemon gelatin 3 Ounce (1 Package)
  Boiling water 1 Cup (16 tbs)
  Beet juice 3⁄4 Cup (12 tbs)
  Vinegar 3 Tablespoon
  Salt 1⁄2 Teaspoon
  Grated onion 2 Teaspoon
  Prepared horseradish 1 Tablespoon
  Celery 3⁄4 Cup (12 tbs), diced
Directions

Dissolve gelatin in boiling water.
Add beet juice, vinegar, salt, onion, gelatin and horseradish.
Chill until gelatin thickens.
Fold in beets and celery.
Drain beets and reserve juice.
Pour into a festive mold such as one of the Mexican star, diamond, or crown and points molds.
