Chicken Salad De Luxe
|Cooked chicken||2 1⁄2 Cup (40 tbs), diced|
|Celery||1 Cup (16 tbs), finely chopped|
|White grapes||1 Cup (16 tbs), sliced|
|Toasted almonds||1⁄2 Cup (8 tbs), slivered|
|Parsley||2 Tablespoon, minced|
|Unflavored gelatin||1 1⁄2 Tablespoon|
|Hot chicken stock||1⁄2 Cup (8 tbs)|
|Mayonnaise||1 Cup (16 tbs)|
|Heavy cream||1⁄2 Cup (8 tbs), whipped|
In a bowl combine chicken, celery, grapes, almonds, parsley and salt.
Soften gelatin in water and dissolve in hot chicken stock.
Cool until mixture begins to thicken.
Stir into mayonnaise; fold in whipped cream.
Combine with salad ingredients and pour into mold.
