Hot Spinach And Mushroom Salad Dressed With Yoghurt
|Spinach/1 1/2 package of 10 ounce cleaned spinach||1 1⁄2 Pound (Loose)|
|White vinegar||4 Teaspoon|
|Black pepper||To Taste|
|Corn oil||2 Tablespoon|
|Mushrooms||4 Ounce, thinly sliced|
|Plain low fat yogurt||2 Tablespoon|
|Diced onions||1 Cup (16 tbs)|
|Freshly squeezed lemon juice||4 Teaspoon|
Wash spinach and remove all tough stems.
In hot oil saute mushrooms and onions until onions wilt.
Add lemon juice, vinegar, sugar and pepper and mix.
Stir in spinach and cook, only until spinach begins to wilt.
Remove from heat; stir in yogurt and serve.
