Red Pepper And Cucumber Salad

Looking for an appetizer or side course that can also be doubled as a main course; this Red Pepper And Cucumber Salad is just the way to go! Who doesn't love the vinegar flavoring to the salad and here I have used red wine vinegar that so well blends with the veggies! Give this salad recipe a try and I am sure you will love it!
  Red wine vinegar 2 Tablespoon
  Peeled cucumbers 2 , cut into batons (Regular)
  Olive oil 2 Tablespoon
  Scallions 2 , thinly sliced
  Freshly ground black pepper To Taste
  Red bell peppers 2 Large, cut in julienne strips
  Chopped fresh chives 2 Tablespoon
  Kirby cucumbers 4 , scrubbed

Whisk vinegar with oil in salad bowl and stir in scallions.
Add red peppers and cucumbers; toss with pepper.
Sprinkle with chives and serve.
