Peachy Coconut Salad
|Lemon juice||2 Tablespoon|
|Almond extract||1⁄4 Teaspoon|
|Cubed peach||3 Cup (48 tbs), unpeeled (fresh)|
|Chopped pitted dates||1⁄2 Cup (8 tbs)|
|Broken pecans||1⁄2 Cup (8 tbs)|
|Unsweetened shredded coconut||1⁄2 Cup (8 tbs)|
|Yogurt||1⁄4 Cup (4 tbs)|
Combine lemon juice, water and almond extract in large bowl.
Add peaches; toss until peaches are coated.
Add dates, pecans and coconut.
Blend yogurt and honey until smooth; fold gently into fruit mixture.
