Winter Walford Salad

Ingredients
  Granny smith apples 2
  Red delicious apples 2
  Golden delicious apples 2
  Diced celery 250 Milliliter (1 Cup)
  Seedless red grapes 250 Milliliter (1 Cup)
  Raisins 75 Milliliter (1/3 Cup)
  Chopped walnuts 175 Milliliter, toasted (3/4 Cup)
  Lettuce leaves 1
  Pomegranate seeds 125 Milliliter (1/2 Cup)
For waldorf dressing
  Mayonnaise 125 Milliliter (1/2 Cup)
  Sour cream 125 Milliliter (1/2 Cup)
  Liquid honey 50 Milliliter (3 Tablespoon)
  Grated lemon rind 2 Teaspoon
  Lemon juice 15 Milliliter (1 Tablespoon)
  Ginger 1⁄2 Teaspoon
  Salt 1 Pinch
Directions

Dice unpeeled apples; place in bowl and add celery, grapes and raisins.
Waldorf Dressing: Whisk together mayonnaise, sour cream, honey, lemon rind, lemon juice, ginger and salt; pour over salad and toss gently to coat.
Cover salad with plastic wrap; refrigerate until chilled. (Salad can be refrigerated for up to 2 days.)
To serve, add nuts to salad and toss gently to mix.
Mound salad on lettuce lined plates.
Garnish with pomegranate seeds.
