Spinach Salad With Mustard Dressing

Ingredients
  Fresh spinach 1⁄2 Pound
  Dijon mustard/Dussel dorf mustard 1 Teaspoon
  Grated onion 1 Teaspoon
  Coarsely ground black pepper 1⁄4 Teaspoon
  Salt 1⁄2 Teaspoon
  Olive oil 1⁄2 Cup (8 tbs)
  Wine vinegar 2 Tablespoon
  Lemon juice 1⁄4 Teaspoon
Directions

Wash the spinach gently but thoroughly in several changes of cold water.
Remove the tough stems and discard them.
Dry the leaves carefully and chill.
Combine remaining ingredients and beat vigorously with a wire whisk.
When ready to serve, pour the sauce over the spinach and toss well.
