Salad Of Raw Mushrooms
|Black pepper||To Taste (Good Grinding)|
|Cream||1⁄2 Cup (8 tbs)|
|Chopped fresh herbs||1 Tablespoon|
|Gruyere cheese||60 Gram, thinly sliced|
Wipe over mushrooms with a damp cloth. Slice them fairly thinly and put in a bowl with oil, lemon juice and garlic. Add salt just before serving. If using anchovy fillets, soak first in a little milk, then cut into long strips and arrange on mushrooms just before serving. Sprinkle over chopped parsley. Serve as a first course with crusty french bread or as a salad with grilled meat. Serves 4.
