Microwaved Celery Victor
|Celery||1 Bunch (100 gm)|
|Canned beef broth||14 Ounce (1 Can)|
|Bottled italian salad dressing||1⁄2 Cup (8 tbs)|
|Pimiento strip||1⁄4 Cup (4 tbs) (As Required)|
Clean celery; cut off root end but do not separate stalks.
Remove coarse outer stalks and leaves.
Reserve leaves for garnish.
Cut celery bunch crosswise into 4 slices measuring 1 1/2 inches per slice.
Tie each slice with string.
Pour beef broth into a 1 1/2 qt.glass casserole dish.
Cover and microwave 5 to 7 minutes or until broth comes to a boil.
Add celery slices.
Cover and microwave 8 to 10 minutes, or until celery is just cooked but still firm.
Give dish a 1/2 turn during cooking.
Let stand 3 to 5 minutes after cooking.
Drain off broth and pour salad dressing over tops of celery.
Cover and refrigerate several hours or overnight, turning celery over to marinate all sides.
