Warm Beetroot Salad With Bacon
|Uncooked beetroot||10 1⁄2 Ounce, peeled and grated|
|Finely chopped shallots||2|
|Lean bacon||1⁄4 Pound, rind removed, chopped into thin strips|
Put the beetroot in a small casserole with 1/4 cup (4 1/2 tablespoons) of water.
Cover and microwave on HIGH for 15 minutes.
Leave to stand for 5 minutes.
Put the shallots and the bacon in a small dish and micro wave, uncovered, on HIGH for 3 minutes.
Mix together the mustard, vinegar, oil, salt and pepper.
Whisk thoroughly with a hand whisk until the sauce emulsifies.
Pour over the shallots and bacon and stir well.
Put the beetroot in a bowl, add the shallot and bacon mixture, stir well.
