Holiday Spinach Salad

Ingredients
  Bacon slices 5
  Lemon juice 3 Tablespoon
  Salad oil 2 Tablespoon
  Sugar 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Tarragon 1⁄2 Teaspoon
  Spinach 1 Pound
  Sliced green onions 1 Cup (16 tbs)
  Celery slices 1 1⁄2 Cup (24 tbs)
Directions

Fry bacon crisp but not hard and cut into small pieces.
In a jar combine the bacon, 2 tablespoons bacon fat, lemon juice, salad oil, sugar, tarragon and salt.
Shake vigorously until all ingredients are well combined.
Thoroughly wash spinach and break into bite size pieces.
Add onions, celery and orange sections.
Pour dressing over all and toss until well coated.
