Assiniboine Jellied Cucumber Salad
|Lime flavored gelatin||3 Ounce (1 Package)|
|Boiling water||3⁄4 Cup (12 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Onion juice||1 Teaspoon|
|Dairy sour cream/1 cup mayonnaise / half of each||1 Cup (16 tbs)|
|Chopped cucumber||1 Cup (16 tbs)|
Dissolve gelatin in boiling water.
Add lemon and onion juice.
Chill until slightly thickened.
Mix sour cream or mayonnaise or both and cucumber into gelatin.
Turn into a 1 quart mold.
Chill until firm.
Unmold salad and garnish with strips of green pepper and pimiento.
