This Assiniboine Jellied Cucumber Salad recipe is sought after by all my friends who have tasted it. With Its delightful flavors the dish is perfect for a grand family dinner at home. Try this excellent Assiniboine Jellied Cucumber Salad.
  Lime flavored gelatin 3 Ounce (1 Package)
  Boiling water 3⁄4 Cup (12 tbs)
  Lemon juice 1⁄4 Cup (4 tbs)
  Onion juice 1 Teaspoon
  Dairy sour cream/1 cup mayonnaise / half of each 1 Cup (16 tbs)
  Chopped cucumber 1 Cup (16 tbs)

Dissolve gelatin in boiling water.
Add lemon and onion juice.
Chill until slightly thickened.
Mix sour cream or mayonnaise or both and cucumber into gelatin.
Turn into a 1 quart mold.
Chill until firm.
Unmold salad and garnish with strips of green pepper and pimiento.
