Avocado And Seafood Salad
|Cooked peeled prawns/Cooked peeled shrimps||2 Ounce|
|Vinaigrette/Thick mayonnaise||2 Tablespoon|
|Lemon zest||1 Teaspoon (Leveled), grated|
|Freshly ground black pepper||1|
|Squeeze of lemon||1|
Remove all the oil from the anchovies by draining them on kitchen paper.
Using a pair of scissors, snip the fillets into small pieces.
Place them in a mixing bowl.
Add the prawns or shrimps (reserving a few for garnish), mayonnaise or vinaigrette, and lemon zest.
Stir to mix and season well.
Cut the avocado in half, remove the stone and peel the skin from the flesh.
Cut the flesh, sprinkle on the lemon juice then add to the other ingredients in the bowl and mix lightly together.
Transfer the salad to a small serving dish and garnish with a whole prawn or shrimp and a twist of lemon.
