This potato salad is a simple side that can be served with a meal. Made with cooked potatoes and vegetables like celery and onions along with green pepper, the potato salad is chilled and garnished with egg slices before serving.
|Diced cooked potatoes||4 Cup (64 tbs) (Red Potatoes)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Chopped pimiento||1 Tablespoon|
|Hard cooked egg slices||4 (For Garnish)|
Combine potatoes, celery, green pepper, onion and pimiento in large bowl.
Add Dressing; toss only until blended.
Cover and refrigerate 2 hours.
Garnish with egg slices, if desired.
