Salad Siciliano

  Garlic 1 Clove (5 gm)
  Anchovy fillets 4
  Lemon juice 1
  Burgundy 6 Tablespoon
  Olive oil 3⁄4 Cup (12 tbs)
  Peppercorns 3⁄4 Teaspoon, crushed
  Garlic 2 Clove (10 gm), minced
  Pimiento 1 , diced
  Tomatoes 3 , diced
  Cooked green beans 1 Cup (16 tbs)
  Diced artichoke hearts 1 Cup (16 tbs)
  Diced hearts of palm 1 Cup (16 tbs)
  Romaine lettuce head 1 , torn in pieces
  Iceberg lettuce head 1 , torn in chunks
  Bread slice 2 , toasted and cut into cubes
  Gorgonzola cheese 1⁄4 Pound, crumbled

Rub a large wooden salad bowl with the whole clove of garlic.
Add anchovy fillets.
Rub bowl again with the garlic and anchovies; mash together forming a paste.
Blend in, stirring vigorously, the lemon juice, Burgundy, olive oil, oregano, and pepper.
(If necessary, correct seasonings to taste.) Blend in minced garlic, diced pimiento, and tomatoes.
Add green beans, hearts of artichoke and palm, romaine, and iceberg lettuce.
Toss lightly.
Add croutons and cheese.
Again, toss lightly.
