Gourmet Potato Salad

Ingredients
  Cubed cooked potatoes 5 Cup (80 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Hard cooked eggs 4 , chopped
  Chopped celery 1 Cup (16 tbs)
  Sliced green onions 2⁄3 Cup (10.67 tbs)
  Green pepper 1⁄4 Cup (4 tbs), chopped
  Curd creamed cottage cheese 1 Cup (16 tbs)
  Dry mustard 1⁄4 Teaspoon
  Pepper To Taste
  Undiluted evaporated milk 2⁄3 Cup (10.67 tbs)
  Crumbled blue cheese 1⁄2 Cup (8 tbs)
  Cider vinegar 2 Tablespoon
Directions

Put potatoes into a large mixing bowl and season with a mixture of the salt and pepper.
Add eggs, celery, green onions, and green pepper; toss lightly.
Combine cottage cheese with remaining ingredients in an electric blender container and blend thoroughly.
Pour dressing over mixture in bowl and toss lightly and thoroughly.
Chill before serving to blend flavors.
Turn into a bowl lined with lettuce and garnish with a sliced hard cooked egg and additional blue cheese.
