This lovely Saffron Rice Salad is appealing both to your taste bids and visually! This is salad that is meant to be served for dinner parties given its exquisite taste and appearance! I am sure you will get hooked to this Saffron Rice Salad recipe.
  Long grain rice 1 1⁄2 Cup (24 tbs)
  Salt 1 Teaspoon
  Saffron 1 Pinch
  Cooked prawns 500 Gram (Shelled And Deveined)
  Mussels 105 Gram (Drained)
  Stuffed olives 1⁄2 Cup (8 tbs), halved
  Black olives 1⁄2 Cup (8 tbs), stoned
  Pepper 1 , chopped (Red Or Green)
  Ground pepper To Taste
  Canned red pimientos 1 Tablespoon, cut into strips
  Chopped parsley 2 Tablespoon
  Lemon vinaigrette 1⁄2 Cup (8 tbs)
  Salt To Taste

Wash rice well in several lots of water. Bring 3 cups water to the boil in a heavy saucepan with 1 teaspoon salt, dribble in the rice, then saffron, stir once it has come to the boil, cover, reduce heat and cook over low heat 10-15 minutes. Remove from heat and fork up lightly. Allow to cool slightly. Transfer to a large bowl. Fold into the rice the prawns, mussels, olives and chopped pepper. Season to taste with salt and pepper. Lightly toss in the dressing while the rice is still warm. Cover and chill. Wash lettuce leaves and use them to line a large bowl, lightly pile salad into bowl and decorate with pimiento strips, top with parsley.
