Orange Crowned Cheese Salad
|Boiling water||1 Cup (16 tbs)|
|Lemon gelatin||3 Ounce (1 Package)|
|Caned frozen orange juice concentrate||6 Ounce (Thawed)|
|Cold water||3 Tablespoon|
|Oranges sections||16 Large (About 2 Large Oranges)|
|Creamed cottage cheese||1 1⁄2 Cup (24 tbs), sieved|
|Strawberries||1 Pint, rinsed|
|Ripe avocado||1 Medium, sieved|
Pour boiling water over gelatin in a bowl and stir until gelatin is dissolved.
Mix in the orange juice concentrate and cold water.
Chill until slightly thicker than thick, unbeaten egg white.
Arrange orange sections in bottom of a 1 1/2 quart fancy tubed mold.
Divide gelatin mixture into halves.
Blend cottage cheese and salt into one half.
Set other half aside.
Turn cottage cheese mixture into mold.
Chill until almost set, but not firm.
Meanwhile, hull 3/4 cup of the strawberries and cut them into halves; reserve whole berries for garnish.
Arrange berry halves on gelatin mixture in mold with rounded sides against mold.
Blend sieved avocado into other half of slightly thickened gelatin.
Turn avocado mixture into mold over first layer.
Chill until firm.
