Nectarine Cucumber Salad
|Plain yogurt||8 Ounce|
|Chopped mint/1 teaspoon dried mint||1 Tablespoon|
|Granulated sugar||1⁄4 Teaspoon|
|Garlic||1 Clove (5 gm), minced|
|Nectarines||1 1⁄4 Pound, sliced|
|Cucumber||1 , pared and thinly sliced|
Combine yogurt, mint, salt, sugar and garlic; blend well.
Place one-third of the nectarines in shallow serving dish; top with one-half of the cucumbers.
Spoon one-third of the yogurt mix-ture over nectarines and cucumbers; repeat lay-ering.
Top with nectarines and yogurt mixture.
Cover and refrigerate 2 hours.
