Chicken and Artichoke Salad
|Cubed cooked chicken||3 Cup (48 tbs)|
|Canned artichoke hearts/1 9-ounce package frozen artichoke hearts cooked, drained and cooled||8 1⁄2 Ounce (1 Package, Drained)|
|Plain yogurt||1⁄2 Cup (8 tbs)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Lemon juice||1 Tablespoon|
Combine chicken, artichoke hearts and almonds in large bowl.
Blend yogurt and mayonnaise to-gether.
Add lemon juice, salt and pepper; blend well.
Taste and adjust seasoning.
Drizzle dress-ing over chicken mixture; toss gently.
Serve in bowl lined with lettuce leaves.
Garnish with black olives.
