Endive And Fruit Salad
|Fruit||1 , freshly cut|
|Vanilla yogurt||1⁄2 Cup (8 tbs)|
|Cream cheese||4 Ounce, softened|
|Mayonnaise||1⁄2 Cup (8 tbs)|
Place the endives on individual salad plates, 2 endives per plate.
Surround with fruit such as pineapple chunks, strawberries, apples and others of your choice.
Combine the yogurt, cream cheese and mayonnaise in a mixing bowl and beat until smooth.
Beat in a bit of fresh pineapple juice if you are using pineapple.
Drizzle the yogurt mixture over the endives and fruit.
