Hard-boil three eggs; cool and remove the shells.
Finely chop the egg and mix it with 50 ml (2 fl oz) (1/4 cup) mayonnaise.
Chop 50g (2oz) lean ham and three spring onions (scallions) and mix into the egg; season to taste.
Spoon into the bouchee cases.
