Tuna Rice Salad
|Uncooked long grain rice||3⁄4 Cup (12 tbs)|
|Frozen green peas||10 Ounce (1 Package)|
|Canned tuna||9 Ounce, drained|
|Canned pineapple tidbits||8 Ounce, drained|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Thousand island dressing||1⁄2 Cup (8 tbs)|
|Sour cream||1⁄2 Cup (8 tbs)|
|Finely chopped green onions||2 Tablespoon|
Cook the rice using the package directions.
Cook the peas using the package directions; drain.
Combine the rice, peas, tuna, pineapple and celery in a large bowl and mix well.
Combine the salad dressing, sour cream and green onions in a small bowl and whisk well.
Add the salad dressing mixture to the rice mixture and toss gently.
Chill, covered, for 2 to 10 hours.
Serve in lettuce cups.
