Winter Fruit Salad With Lemon Poppy Seed Dressing
|Romaine head||1 Large, torn into bite-size pieces|
|Shredded swiss cheese||1 Cup (16 tbs)|
|Sweetened dried cranberries||1⁄4 Cup (4 tbs)|
|Apple||1 , peeled and chopped|
|Pear||1 , chopped|
|Cashews||4 Ounce (Or More)|
|Sugar||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄3 Cup (5.33 tbs)|
|Finely chopped onion||2 Teaspoon|
|Dijon mustard||1 Teaspoon|
|Vegetable oil||2⁄3 Cup (10.67 tbs)|
|Poppy seeds||1 Tablespoon|
Combine the romaine, cheese, cranberries, apple, pear and cashews in a large salad bowl.
Combine the sugar, lemon juice, onion, Dijon mustard, vegetable oil, salt and poppy seeds in a blender container and process until smooth.
Pour over the salad just before serving.
Toss and serve.
