Potato Salad (Patatosalata)

Ingredients
  Olive oil 1⁄2 Cup (8 tbs)
  Wine vinegar 3 Tablespoon
  Oregano 1 Teaspoon, crushed
  Chopped parsley 2 Tablespoon
  Onion 1 Medium, finely sliced
  Red potatoes 5 Large
  Salt To Taste
  Pepper To Taste
Directions

Combine olive oil, vinegar, oregano, parsley, and onion.
Mix well.
Set aside to marinate.
Scrub potatoes.
Boil them in salted water in their jackets.
When just tender (about 40 minutes), remove and plunge into cold water so they can be handled at once.
Peel while hot and cut into even slices.
Pour the dressing over the potatoes; toss lightly.
Add salt and pepper.
