Salt Herring And Vegetable Salad

Ingredients
  Salt herring 1 1⁄2 Pound
  Pared potatoes 2 Medium, cooked and cubed
  Beets 4 Medium, cooked, peeled, and finely cubed or cut in julienne strips
  Apple 1 Medium, pared and cubed
  Onions 1 Tablespoon, chopped
  Sweet pickles 2 Medium, cubed
  Sugar 1 Tablespoon
  Vinegar 2 Tablespoon
  Pepper white 1⁄4 Teaspoon
  Whipping cream 1⁄2 Cup (8 tbs), whipped
Directions

Soak herring overnight in water to cover.
Bone; skin, and cut in small cubes.
Lightly mix herring, potatoes, beets, apple, onion, pickles, sugar, vinegar, and pepper.
Chill.
Fold in whipped cream just before serving.
Garnish with sieved hard cooked egg yolks and finely chopped hard cooked egg whites.
Makes about 6 cups of Herring Salad or fold whipped cream in with other ingredients and mold in loaf pan.
