Salt Herring And Vegetable Salad
|Salt herring||1 1⁄2 Pound|
|Pared potatoes||2 Medium, cooked and cubed|
|Beets||4 Medium, cooked, peeled, and finely cubed or cut in julienne strips|
|Apple||1 Medium, pared and cubed|
|Onions||1 Tablespoon, chopped|
|Sweet pickles||2 Medium, cubed|
|Pepper white||1⁄4 Teaspoon|
|Whipping cream||1⁄2 Cup (8 tbs), whipped|
Soak herring overnight in water to cover.
Bone; skin, and cut in small cubes.
Lightly mix herring, potatoes, beets, apple, onion, pickles, sugar, vinegar, and pepper.
Fold in whipped cream just before serving.
Garnish with sieved hard cooked egg yolks and finely chopped hard cooked egg whites.
Makes about 6 cups of Herring Salad or fold whipped cream in with other ingredients and mold in loaf pan.
