|Boiling water||3 Cup (48 tbs)|
|Lime flavored gelatin||6 Ounce (2 packages, 3 ounces each)|
|Pineapple juice||1 Cup (16 tbs)|
|Creamed cottage cheese||2 Cup (32 tbs)|
|Minced onion||1 Teaspoon|
1 teaspoon minced green pepper 1/2 cup coarsely chopped cucumber 1/2 cup coarsely chopped celeryour boiling water on gelatin in large bowl; stir until gelatin is dissolved.
Stir in pineapple juice, vinegar and salt.
Pour 1 cup of gelatin mixture into 8-cup ring mold.
Chill until firm.
While bottom layer chills, chill remaining mixture until thickened slightly but not set; beat with rotary beater until light and fluffy.
Mix in remaining ingredients; pour on gelatin layer in mold.
Chill until firm; cover.
(Can be served immediately.)
