The salmon salad is a gelatin salad recipe made with canned salmon and plain gelatin. Flavored with lemon juice and mayonnaise, the salmon salad has veggies like celery and green pepper in it. chilled and molded, the salmon salad is best served on crisp lettuce and greens.
|Unflavored gelatin||2 Tablespoon|
|Cold water||1⁄4 Cup (4 tbs)|
|Lemon juice||3 Tablespoon|
|Hot water||1 Cup (16 tbs)|
|Canned salmon||1 Pound, cleaned and flaked|
|Mayonnaise||3⁄4 Cup (12 tbs)|
|Diced celery||1 Cup (16 tbs)|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Minced onion||1 Teaspoon|
|Lettuce leaves||4 (Crisp Ones)|
Soften gelatin in cold water and lemon juice.
Dissolve in hot water; chill until thickened and syrupy.
Fold in remaining ingredients.
Pour into oiled 2-quart mold.
Chill until firm.
Un-mold on lettuce.
