Tomato Pinwheel Salad
|Cucumber||1 , peeled, scored and sliced|
|Hard cooked eggs||1 , sliced|
|Grated cheese/Paprika||To Taste|
Line salad plate with lettuce leaves.
Remove core from tomato.
Slice into six or eight wedges, but do not cut through to bottom of tomato.
Place cucumber slices between tomato wedges to give pinwheel effect.
Place cucumber and egg slices around the tomato.
Fill tomato with mayonnaise.
Garnish with cheese or paprika.
