Chicken Salad Gel
|Unflavored gelatin||1 Tablespoon|
|Water||1⁄4 Cup (4 tbs)|
|Chicken broth||2 Cup (32 tbs)|
|Chopped onion||1 Tablespoon|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Mayonnaise/Salad dressing||3⁄4 Cup (12 tbs)|
|Diced cooked chicken||1 Cup (16 tbs)|
|Chopped celery||1⁄4 Cup (4 tbs)|
|Sliced stuffed olives||1⁄4 Cup (4 tbs)|
|Chopped green pepper||2 Tablespoon|
Soften gelatin in 1/4 cup water; add 1 cup hot broth.
Combine with salt, paprika,onion, lemon juice and remaining broth.
Cool until it begins to thicken; beat in mayonnaise.
Fold in chicken, celery, olives and green pepper.
Chill in a shallow 7 x 9 inch container.
Cut into squares; unmold on salad plate.
May be garnished with deviled eggs, radish roses or parsley.
