Beet Gelatin Salad

Ingredients
  Cooked chopped beets 1 Cup (16 tbs)
  Lemon gelatin 1 Tablespoon
  Hot water 1 Cup (16 tbs)
  Vinegar 2 Tablespoon
  Chopped onion 2 Tablespoon
  Chopped celery 1 Cup (16 tbs)
Directions

Drain beets, reserving 3/4 cup juice.
Dis solve gelatin in hot water; add beet juice and vinegar.
Chill until partially set.
Add re maining ingredients; pour into mold.
Chill until firm.
Unmold on lettuce; serve with cream cheese dressing or mayonnaise.
