Jellied Ambrosia Salad
|Unflavored gelatin||1 Tablespoon|
|Cold water||1⁄4 Cup (4 tbs)|
|Boiling water||1⁄4 Cup (4 tbs)|
|Fresh orange juice||1 1⁄4 Cup (20 tbs)|
|Lemon juice||2 Teaspoon|
|Grated coconut||3 Teaspoon, or shredded|
Soften gelatin in cold water.
Dissolve in boiling water.
Add sugar; stir until com pletely dissolved.
Add orange and lemon juices.
Peel oranges; cut into sec tions.
Peel and slice banana.
When orange mixture is syrupy, fold in fruit and coconut.
Pour into 3 cup mold or four individual molds; chill until firm.
Serve garnished with orange sections and shredded coconut.
