Red Pepper-Dijon Rice Salad
|Uncooked long grain white rice||1 Cup (16 tbs)|
|Scallions||2 , chopped|
|Water||1 3⁄4 Cup (28 tbs)|
|Plain non-fat yogurt||1⁄4 Cup (4 tbs)|
|Red bell pepper||1 , seeded and diced|
|Nonfat mayonnaise||1⁄4 Cup (4 tbs)|
|Chopped parsley||1⁄3 Cup (5.33 tbs)|
|Dijon mustard||1⁄2 Teaspoon|
Place rice and water in a 3-quart microwave-safe casserole.
Cook on high for 4 to 7 minutes until the water boils.
Cook on medium for 10 minutes or until all the liquid is absorbed.
Let stand, covered, for 5 minutes.
Stir red pepper, parsley, and scallions into rice.
Combine yogurt, mayonnaise, and mustard.
Stir into rice.
