Avocado Grapefruit Salad
|Lime gelatin||6 Ounce|
|Grapefruit||2 , peeled and sectioned (Fresh)|
|Avocados||2 , sieved|
|Mayonnaise||1⁄2 Cup (8 tbs)|
Dissolve gelatin according to directions on package.
Cool until partially set.
Remove membranes from grapefruit sections.
Ar range sections in 8 x 12 inch pan.
Pour one half of gelatin mixture over grapefruit.
Pour remaining gelatin mixture into a bowl; add avocado and mayonnaise.
Beat with elec tric or rotary beater until light and foamy.
Pour over grapefruit layer.
Chill until firm.
Cut into squares; serve foamy side up on a lettuce leaf.
Garnish with whipped cream and a Maraschino cherry.
