Hot Potato Salad (Germany)
|Onion||2 Teaspoon, minced|
|Vinegar||1⁄2 Cup (8 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Dry mustard||1 Teaspoon|
|Parsley||1⁄4 Cup (4 tbs), chopped|
Cook potatoes with jackets on; salt lightly.
Cover with cold water to hasten cooling.
Peel; cut into cubes.
Mince bacon; fry until crisp.
Combine onion, vinegar, water, sugar, salt, pepper and mustard; heat.
Add potatoes and bacon.
Heat slowly and mix to flavor potatoes.
Garnish with parsley.
