Fruit Salad Delight
|Chopped maraschino cherries||1⁄4 Cup (4 tbs)|
|Unflavored gelatin||1 Tablespoon|
|Cold water||1⁄2 Cup (8 tbs)|
|Mayonnaise||1 Cup (16 tbs)|
|Cream cheese||8 Ounce|
|Confectioner's sugar||2 Tablespoon|
|Crushed pineapple||1 Cup (16 tbs), drained|
|Coarsely chopped apricots||1 Cup (16 tbs), drained|
|Heavy cream||1 Cup (16 tbs), whipped|
Drain cherries, reserving 1/4 cup juice.
Soften gelatin in water.
Blend mayonnaise and cream cheese.
Add cherry juice, sugar and gelatin.
Chill until slightly thickened.
Add fruits; fold in whipped cream.
Chill until firm.
Serve on lettuce.
