Fresh Fruit Salad
|Egg||1 , well beaten|
|Honey||1⁄4 Cup (4 tbs)|
|Lime juice||1 Tablespoon|
|Whipped heavy cream||1⁄2 Cup (8 tbs)|
|Chopped fruits||8 Cup (128 tbs)|
|Peanuts||1⁄2 Cup (8 tbs), coarsely chopped|
|Salad greens||1⁄2 Cup (8 tbs)|
Combine egg, honey and lime juice in a saucepan.
Cook over medium heat, stirring constantly until thickened.
Remove from heat; cool 30 minutes.
Fold in whipped cream; chill until ready to serve.
Just before serving, blend fruits and peanuts.
Arrange on crisp salad greens.
Garnish with egg-honey dressing.
NOTE: For a festive touch, serve fruit salad in scooped-out melon halves.
