Shredded Carrot Salad

Ingredients
  Carrots 6 Large, shredded
  Cayenne pepper 1 Pinch
  Scallions 2 , chopped
  Black pepper 1⁄4 Teaspoon
  Sugar 2 Tablespoon
  Lemon juice 3 Tablespoon
  Ground cumin 1⁄2 Teaspoon
  Parsley 1⁄2 Cup (8 tbs), minced
Directions

1.Toss the carrots with the scallions.
2.Combine the sugar, ground cumin, cayenne pepper, black pepper, and lemon juice.
3.Toss carrot-scallion mixture with spices. Let stand for 1 hour. Sprinkle with parsley before serving.
Variation â–  Delete the sugar, cumin, and cayenne pepper.
Substitute 1 teaspoon grated fresh gingerroot and 1 clove garlic, minced.
