Eggnog Christmas Salad
|Crushed pineapple||2 Cup (32 tbs) (With Juice)|
|Unflavored gelatin||1 Tablespoon|
|Fresh lime juice||3 Tablespoon|
|Eggnog||1 1⁄2 Cup (24 tbs)|
|Chopped celery||3⁄4 Cup (12 tbs)|
|Raspberry flavored gelatin||3 Ounce|
|Boiling water||1 1⁄2 Cup (24 tbs)|
|Frozen cranberry orange relish||10 Ounce|
|Salad greens||1 Cup (16 tbs) (For Serving)|
Drain pineapple juice into saucepan; heat to boiling.
Soften gelatin in lime juice; dissolve in boiling pineapple juice.
Add eggnog; chill until partially set.
Fold in pineapple and celery.
Pour into mold; chill until firm.
Dis solve raspberry gelatin in boiling water; add cranberry orange relish, stirring until relish is thawed.
Chill until slightly thickened; pour over eggnog mixture.
Chill until firm.
Unmold on salad greens.
