Cardinal Beet Salad

Ingredients
  Shoestring beets 1 Can (10 oz)
  Lemon gelatin 3 Ounce (1 package)
  Boiling water 1 Cup (16 tbs)
  White vinegar 3 Tablespoon
  Onion juice/Grated onion 2 Tablespoon
  Diced celery 3⁄4 Cup (12 tbs)
  Salt 1⁄2 Teaspoon
  Horseradish 2 Tablespoon
Directions

Drain beets, reserving 3/4 cup juice.
Dis solve gelatin in boiling water; add mixture of beet juice and vinegar.
Cool.
Add remaining ingredients; pour into mold or square pan.
Chill until firm.
