Very Fast Potato Salad
|Red potatoes||2 Pound, cut into chunks|
|Nonfat mayonnaise||2 Tablespoon|
|Plain non-fat yogurt||6 Tablespoon|
|Chopped scallions||1⁄4 Cup (4 tbs)|
|Dijon mustard||1 Tablespoon|
|Green bell pepper||1 , seeded and chopped|
Bring a large pot of water to a boil.
Add potatoes and cook for 15 minutes or until tender.
Toss potatoes with scallions, green pepper, mayonnaise, yogurt, and mustard.
Refrigerate for 1 hour.
